Cavalry can also pick off you missile units, which are very handy for killing off skirmishers that are dangerous to your legionaries en masse. I find 2-4 units of spearmen on the flanks is enough to deter cavalry so that the legionaries can focus on infantry, which is what they are best at. They won't generally get annihilated unless charged from the flank or rear, but they will take losses. Roman generic auxiliary cavalry is pretty strong though already. On hard or higher difficulties, decent heavy cavalry will hurt legionaries. probably can be recruited in Sarmatian territories. I believe in Germania you can get longbows which can open/burn city gates undetected (if those gates are not protected by troops). In terms of useful auxiliaries: head for Spain for Balearic slingers (Rhodean ones are great too). If you play as Romans what do you want with spears? Legionaries are heavy and sturdy enough to withstand occasional AI cavalry charge.
